Who doesn’t like hot, bloated rice, but unfortunately, rice has the potential to create the perfect conditions for a potentially dangerous bacteria to grow.
Bacteria called Bacillus cereus grows in rice. Simply boiling the rice does not kill the bacteria because the bacteria produce ‘cells’ that can withstand extreme heat.
Rice stored at room temperature after cooking can become susceptible to various bacteria that can multiply and release harmful toxins that cause B-serius food poisoning, known as fried rice syndrome. which is sometimes fatal.
Be it hands or rice, washing food before cooking is always a good habit. Washing the rice will change its texture and get rid of any insects or other contaminants, but remember that this will not get rid of the B-serius bacteria because the bacteria are embedded in the rice grains.
You can avoid this if you pay attention to how you store your rice before, during and after it is cooked. Avoid leaving cooked rice out for more than an hour. After boiling the rice, serve it immediately in its cooked form or, if storing, immediately store it in a sealed container in the refrigerator or freezer.
Although rice stored outside after cooking can be reheated, it is safe as long as the rice is kept in the freezer or refrigerator after cooking. If this rice is heated in the microwave or on the stove without refrigeration, the risk of fatal disease increases.
