Nicoletta Pellegrini of the University of Udine in Italy and her colleagues said that if vegetables are eaten instead of meat, it reduces inflammation, improves insulin sensitivity and reduces oxidative stress. The research, published in the journal Nutrition, Metabolism and Cardiovascular Disease, was supported by several Italian organizations.

The reason is that meat and plant proteins are very different. Vegetarian foods contain the most complex nutrients, including carbohydrates, fiber, fatty acids and, above all, micronutrients. Then there are phytochemicals and other important ingredients that also prevent obesity and cholesterol.

Unlike meat, vegetables are very low in cholesterol, calories and other unhealthy fats. Above all, meat and vegetables differ greatly in their absorption of iron and its absorption into the body. Eating vegetables also increases the ability of the body to absorb glucose. When iron from meat enters the human body, it also contains phytates, which are not very good for the body.
